Baked Egg Frittata

This simple and delicious baked egg frittata is perfect for any occasion or meal! All you need are your favorite omelet ingredients to bake this heavenly egg based dish.



Sunday brunch is an all time favorite of mine. When the family can get together I hope it is either celebrated with a brunch or a barbeque! So with Father's Day in only a few days, we are preparing some brunch festivities and meals. This baked egg frittata is my go-to breakfast item because it doesn't take TOO much preparation BUT it still brings flavor, nutrition and uniqueness to the breakfast table.


I like to use ingredients that you normally would find in your average omelet but the ingredient combinations are endless!


My go-to ingredients to celebrate Father's Day this Sunday?

  • Spinach

  • Tomato

  • Garlic

  • Ham

  • Mozzarella cheese

Ingredients I ALWAYS have on hand.

Baked Egg Frittata


Makes 12 servings (2 round pie pans)


Ingredients:

  • 10 eggs

  • 3/4 cup skim milk

  • 1 tablespoon butter

  • 1/4 cup yellow onion, diced

  • 1 tablespoon garlic, minced

  • 2 cups spinach, fresh or frozen

  • 10-12 cherry tomatoes, cut in half

  • 4-6 slices deli ham, diced (you can also substitute for bacon bits)

  • 1 cup part-skim mozzarella cheese, shredded

  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400 degrees F.

  2. In a bowl, combine eggs and milk, whisk until smooth. Set aside.

  3. In a large skillet over medium heat, add butter, onion and garlic. Sauté for about 2-3 minutes, until onions are opaque. Add spinach and tomatoes and cook for about 2 minutes, or until spinach is cooked.

  4. In two prepared round baking pans**, add sautéed vegetables, evenly distributing to cover the bottom of the pans.

  5. Pour egg mixture over sautéed vegetables, filling each pan about half way. Bake for 30-35 minutes, or until egg is firm.

  6. Cut into 6 slices and serve immediately.

Nutrition Facts per serving: 135 calories, 3g carbohydrates, 8g fat, 11g protein, 243mg sodium, 1g sugar


**Note: You can also use a muffin baking pan and make mini frittatas for easy grab n go!



These frittatas are freezer friendly and can be stored in the freezer for up to 1 month. Just microwave a frozen frittata slice/muffin for 1 minute and enjoy!
