A creamy, decadent and healthy dessert that will help to satisfy your sweet tooth or hunger while including some healthy fats!
When it comes to pudding, I LOVE topping it off with fresh berries and bananas, whipped cream or making a delicious layered pudding and cake creation. SO when I got tired of buying the store bought pudding cups or pudding mixes, I thought WHY NOT make a more simple treat that is healthier, filling and delicious? IN come the avocados!
WHY AVOCADOS? Avocados provide a creamy and smooth texture when blended - similar to the texture bananas provide when added to smoothies. YES, I have added avocado to smoothies and YOU CAN TOO!
Avocados are a great source of healthy fat (mono and poly-unsaturated fat) and fiber - both of which can slow digestion and help improve satiety (feelings of fullness). Adding avocado to your meals is a great (and simple) way to increase your healthy fat consumption while also enjoying its natural and creamy goodness.
SO why not add it to your smoothies or PUDDING to make a more nutrient dense meal or snack?

Chocolate Avocado Pudding
Serves 6
Ingredients:
3 ripe medium-sized avocados, pitted
1/4 cup cocoa powder, unsweetened
1 1/2 cup skim milk or your favorite milk
2 teaspoons vanilla extract
2 tablespoons liquid stevia, depending on your preferred sweetness level
Optional toppings: chopped walnuts, chia seeds, granola, fresh berries, or shredded coconut
Directions:
Add all ingredients to blender and blend until smooth. If mixture is too thick, thin it out by adding water.
Refrigerate for 1 hour and enjoy chilled.
Note: Add your favorite toppings to enjoy this delightful treat!
