Pitaya Nice Cream

A healthy twist on your favorite dessert! Better than sorbet and made with real fruit and ingredients!







With my birthday weekend coming to end, I thought that after all the cake and goodies, I would share one of my favorite ice cream/sorbet alternatives made with freezer staple items!


Nice cream is all the rave these days and I have jumped on board. All you need is frozen bananas (which is great when you have overripe bananas and you aren't feeling banana bread - freeze them!) Your can make nice cream with ANY flavor! I personally LOVE flavoring it with blueberry, pineapple and pitaya!


This nice cream recipe is a simple and delicious recipe and you can add your favorite fruit to the blended frozen bananas and enjoy dessert without the guilt.


This is a low fat, low calorie and natural sugar option to that pint of ice cream ;) Enjoy!


Pitaya Nice Cream

Makes 4-6 servings


Ingredients:

  • 1 cup frozen pitaya (pink dragon fruit), cubed and slightly thawed

  • 2 cups frozen banana, sliced and slightly thawed (about 2 large bananas)

  • 1/2 cup water or almond milk (add more for the right consistency)

Directions:

  1. Add all ingredients into a blender. Blend until smooth.

  2. In a baking pan, lined with parchment paper, add mixture and smooth out till evenly distributed covering the pan.

  3. Freeze for 2 hours, scoop and enjoy!

Optional toppings: fresh strawberries, pineapple, mango, granola, or coconut shavings


Nutrition Facts per serving: 103 calories, 16mg sodium, 25g CHO, 3g dietary fiber, 13g sugar, 1g protien
