A quick, simple and filling meal to celebrate the 4th of July with the family.

I am all for quick recipes and when I looked at the calendar today and saw that it was 4th of July I knew I needed to make these easy, delicious and flavorful Ground Turkey Sloppy Joes! Using pantry staples, some lean ground turkey and cabbage makes cooking easy on this holiday weekend.
Ground Turkey Sloppy Joes
Makes 6-8 servings
Ingredients:
For Meat:
1 lb. lean ground turkey
1 medium yellow onion, chopped
1 tablespoon garlic, minced
1 tablespoon extra-virgin olive oil
1/2 cup barbecue sauce (no sugar added)
1-8oz can tomato sauce
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon cayenne
Salt and pepper, to taste
For Coleslaw:
1/2 small red cabbage, chopped
1/2 small cabbage, chopped
1/2 cup lite mayonnaise
2 tablespoons honey (add more to hit your sweetness!)
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
Salt and pepper, to taste
Other:
6 sesame seed buns, split
Directions:
In a large skillet over medium heat, cook ground turkey, onion, and garlic with some extra-virgin olive oil, until turkey is fully cooked.
Add barbeque sauce, tomato sauce, chili powder, cumin, and cayenne and stir until well combined. Bring to a boil then reduce heat to simmer and cook uncovered for 8-10 minutes.
While turkey simmers, prepare coleslaw. In a large bowl combine chopped cabbage, mayo, honey, apple cider vinegar, lemon juice, salt and pepper. Mix until combined. Add more honey to meet your sweetness preferences. Set aside.
Assemble sloppy joes: portion out about 1/2 cup meat mixture on each bun and top with coleslaw and serve immediately.
