Jumbo Peanut Butter Cups

A childhood favorite! Enjoy one of these goodies that satisfies your sweet tooth and includes ingredients right in your pantry!

If you know me, you know I have a major sweet tooth. But lately, I have been noticing my sweet options not being very satisfying. Meaning, I continued to crave sweets and felt hungry afterwards, not satisfied AT ALL. So I got to thinking that MAYBE I needed more substance in my desserts. Desserts made with more natural ingredients and packed with more nutrition!


In come these JUMBO peanut butter cups! I decided to make a childhood favorite candy that was not only sweet but ALSO filling and made with ingredients I knew and liked!


These JUMBO PB cups are made with all-natural peanut butter, coconut oil, stevia, almond flour and a combination of both milk and dark chocolate.


Nut Butter: Why did I used all-natural peanut butter? Because it contains just peanuts and salt (and sometimes not even the salt). Most peanut butters contain fully hydrogenated vegetable oils and sugar, this way you can just add ingredients that you know and love. You can substitute for any other nut butter that you like, I have tried this recipe with walnut and almond butter and the combination is still delicious!


Oil: I used coconut oil because I like the flavor, however, extra-virgin olive oil or canola oil would work just the same!


Chocolate: I enjoy milk chocolate over dark chocolate but I know and understand that dark chocolate has some health benefits as it contains antioxidants, less sugar and fat than milk chocolate. So combining the two (for me) is a nice balance of sweetness and includes some nutrition. ;)

Flour: Almond flour adds a little more protein to the mix but is absolutely optional! You could also substitute is for coconut flour or just finely grind up some walnuts or toss in some chia seeds. The options are endless!


Size: JUMBO size cups and not mini ones? Well, I knew that with mini PB cups, I would be eating more than a handful thinking they are tiny and I need to eat more to satisfy my sweet tooth. BECAUSE visually, mini ANYTHING, looks like you are getting ripped off, am I right!?


So with one JUMBO PB cup, I am satisfied mentally and physically, knowing one is MORE ;)

The expression “eat with your eyes” is certainly true because when a dish is visually appealing, it is more appetizing and satisfying.


Makes 10-12 cups

Ingredients:


Chocolate Layers:

  • 3/4 cup dark chocolate chips

  • 1/4 cup milk chocolate chips

  • 1 tablespoon coconut oil

Peanut Butter Layer:

  • 1 cup all-natural creamy peanut butter

  • 3 tablespoons fine almond flour

  • 2 stevia packets

Other:

  • Himalayan pink sea salt

  • Muffin pan

  • Liners

Directions:

  1. Prepare muffin tin with liners. Set aside.

  2. In a microwave safe bowl, combine chocolate chips and coconut oil. Microwave for 1 minute stirring at 30 second intervals. Repeat until chocolate is melted and smooth.

  3. Spoon melted chocolate into liners, spread evenly to cover the bottom. Place in freezer for 10 minutes and prepare peanut butter layer. *You should have melted chocolate leftover for last layer*

  4. On the stove top in a pan, combine peanut butter, almond flour and stevia. Mix well and cook for about 5 minutes or until peanut butter is smooth and flour is dissolved.

  5. Take muffin pan out of freezer and add peanut butter layer on top of solid chocolate layer. Spoon about 1 tablespoon on top of chocolate layer (you can add more peanut butter if you want a thick middle layer), spread evenly to cover chocolate. Place back in freezer for 10 minutes.

  6. With leftover melted chocolate, spoon chocolate over peanut butter layer and spread evenly. Freeze for 10 minutes, sprinkle with sea salt and enjoy immediately!

Note: Peanut butter cups can last about a week in the fridge or a month in the freezer.
